Ingredients
8-10 flounder fillets
1 package of Seafood Breader Mix
1/2 gal. of frying oil
salt & pepper
Start by seasoning each fillet with the salt and pepper. Roll fillet in Seafood Breader Mix making sure to coat
both sides. Allow each fillet to tact for a few minutes before placing in oil. Heat oil in a cast iron skillet
to approx. 350 degrees, (You can test if oil is hot enough by placing a small piece of the breader in the oil.
If it starts to sizzle right away then the oil is hot enough to start). Place each flounder fillet into the hot
oil with the skin side up, (This will keep the fillet from curling). Cook until golden brown.
Serve with all your favorite sides. You can not go wrong with fresh flounder fillets fried to perfection!

Use a small ice cream scoop to drop your batter into the hot oil.
